Clove is a tree native to Indonesia. Its dried flower buds are a popular spice used in Chinese and Ayurvedic medicine. They add a deep, rich flavour and they are excellent in beer, especially Christmas ales, with other spices in the mix.
You might try to add a dash (no more!) of cloves to a hefeweizen to accent the clove character of the Weizen beer yeast, which tends to come out when this style is fermented at the lower end of the temperature range.
