Dried Chamomile flowers can be used in Belgian Witbeir added in the last 5 minutes of the boil along with bitter orange peel and coriander seeds.
Can be used to make tea, just add 2 table spoons to a cup of boiling water, let infuse then strain.
Chamomile is also used as a floral botanical in gin recipes.
When distilled on its own, the sweetness of the chamomile also becomes apparent alongside its additional warming floral tones, making the flavour soft and succulent and more aromatic than when having it in a hot tea. A key characteristic of chamomile is that unlike many delicate flowers it doesn’t rot very quickly which allows full extraction of the chamomile’s full set of flavours, especially when used in the flowers dried form. Its second key characteristic is that it doesn’t dissipate or dominate when distilling which allows the chamomile to compliment and soften the gin instead of overwhelm all other flavours present in the gin.
Some gins which feature chamomile in their recipes are Hendrick’s, Tanqueray No.10 and Bloom gin.
All gins contain juniper berries as a base flavour. Additional ingredients are then added and infused into the gin to give it a unique flavour.
The amount of chamomile added to your gin depends on how strong you want the flavour to be. The recommended amount of chamomile to infuse into gin is around 3 tablespoons per 750ml.
